Fettucine Alfredo from the Wheat Belly Cookbook

Here’s a recipe for Fettucine Alfredo from the Wheat Belly Cookbook:

Prep time: 5 MINUTES Total time: 15 MINUTES
Makes 4 servings

Remember: Don’t be afraid of fat! Cheese, butter, and heavy cream shine in this Fettuccine Alfredo, minus the truly unhealthy ingredient, wheat. Surely the kids will eat their broccoli when it’s served along with this pasta dish!

3 packages (7 or 8 ounces each) shirataki fettuccine, rinsed and drained
4 tablespoons butter
1 clove garlic, minced
3/4 cup heavy cream
3/4 cup grated Parmesan cheese
1/4 cup grated Pecorino Romano cheese
1/4 teaspoon sea salt
1/4 teaspoon ground black pepper
Pinch of ground red pepper
1 tablespoon minced fresh parsley (optional)

I am an expert at hiding, are you?

When I was a compulsive over-eater, I became very good at hiding.

Hiding that I was eating, hiding that I was binging, hiding that I was in pain, and suffering on the inside.

I became an expert at putting on a mask of a happy face to the world, and saving my misery for my alone time, shared only with the comfort of food.

And if ever I was caught and confronted about my over-eating, I’d draw on another skill-set–lying. Oh yes, I’d put on the most angelic expression and lie through my teeth if necessary to avoid admitting the truth…woman-hiding-face

Break Time

I’m going to stop with the daily posting for now.

I’m depressed from binging and not in a good frame of mind. Currently the blog is harming me more than doing good.

Judge me as you will.

I feel like shit and every time I stand up it hurts. Honestly, it’s almost more depressing working a gym because I get a front row seat to everything I want to do but can’t. I’ve been doing yard work this weekend, and I’m so slow. Ironically, it’s like being back at 600+ lbs.


I saw the doctor, that is going to give me the epidural block, yesterday. He will be targeting the nerves at L3-L4, L4-L5, and L5-S1. I hope to find out today when they can perform the procedure on me. Once I have the block, I will have a follow up appointment three weeks after. I am also going to call the back surgeon to see if/when I can start physical therapy. Although I really wanted to use the physical therapists at work because I trust in their abilities and it would be the most convenient location for me, I hope to see a lady at another facility because I hear she specializes in back physical therapy.
